In ~/Library/Application Support/Ultimate Paste. Nothing is uploaded.
What can it remember?
Text, links, code, colors, SVG, files, images and screenshots. Each clip gets a type and source app.
How do I paste something back?
Press ⌃⌘V, use ⌃⌘0-9 for recent clips, or open the full History window and paste from there.
